Course Content
The Diploma in Advanced Professional Cookery is an exiting course for students wishing to pursue a career as a chef working in the international catering or hospitality sector. Training takes place in the College’s industry-standard production training kitchens and T.A.S.T.E. restaurant.
This course also includes a salaried work placement in the hospitality industry in the UK. The work placement may be situated anywhere in the UK. Student work placements have included positions with Renaissance Hotel, Chancery Hotel, The Ritz Hotel, Millennium Hotel, Mayfair Hotel, Ramada Jarvis Hotels, Sheraton Hotels, Park Lane Hilton Hotel, Dorchester Hotels, and the Washington Mayfair Hotel.
Modules include
Supervisory skills in the Hospitality industry, The Principals of Food Safety Supervision for Catering, Practical Gastronomy, Advanced Suits and Techniques in producing fish and shellfish meat, poultry, game and vegetable and vegetarian dishes.
