Food Festival at Hilton Colombo
Hilton Colombo Residence brings the colourful taste of Brazil to
Colombo at the Union Bar & Grill from June 24 to 30. Guest Chef
Arthur França from the Hilton Sao Paulo Muruumbi has been
flown down especially for the , Colombo's first ever Brazilian Food
Promotion.
Taste the quintessential Feijoada, Brazil's national dish, a thick
souply black bean mixture seasoned with onion, garlic, pork sausages
and bacon. The actual origin of the Felijoada is essentially African,
but popular belief has that it evolved from a combination of sources
- from African slaves, to Portuguese colonists to the indigenous
Indians. The African slaves had the basic bean stew, the Portuguese
added the linguiça (sausage) and the Indians added the farofa
(toasted manioc flour).
Today the Felijoada is served all over Brazil, from the quaintest
little eateries to the most sophisticated restaurants and every
family has its favourite Feijoada recipe. If dining out in Brazil,
you would only find this dish served in restaurants on Wednesdays
and Saturdays.
Food and Beverage Manager, Arden Clements said, "Brazil is
also famous for its barbecued meats. The Union Bar and Grill, renowned
for its delectable steaks and a la minute grill goes one step further
during the Brazilian food fiesta by exploring new 'grill' concepts,
the highlight of the promotion being he Churrasco traditional Brazilian
barbecue skewered meats".
Although Brazilians are meat lovers their cuisine is much more diverse
- Brazilian recipes use wheat, rice, corn and beans, but manioc
(cassava - a local root) plays a central role in Brazilian food.
Brazil's long coastline also provides a wealth of ingredients with
shrimp, fish and crab often making it to the table fried, backed
or stewed. Mariscada, a baked stew with shrimps and mussels is a
popular favourite.
The
menu also features Brazilian Lasagne and Stroganoff. Executive Chef
Kumara highlights, "Brazilian Lasagne differs from the traditional
Italian recipe in that it has a creamy white sauce made with cheese
and nutmeg as one of its layers and topping. As the meat sauce is
used not only as a topping but also as a layer, it tends to have
plenty of ground beef. Brazilians love their sweets so to satisfy
your sweet tooth we have included sweet temptations such as Beijinho
de Coco (coconut fudge) and Brigadeiro (chocolate fudge)".
Throughout the food festival, the Union Bar will serve famous Brazilian
carnival drinks - Caipirinha and Batidas (fruit drinks served with
or without rum or Cachaca, Brazilian sugarcane liquor).
