Subs and sandwiches packed with unusual flavours
Anyone who goes to the Colombo City Centre invariably ends up making a pitstop at the Food Studio on the third floor to grab a coffee, snack, or meal.
This June, Colombo City Centre’s outlet launched its latest venture, PRIMO, a deli serving fresh made-to-order subs and sandwiches with flavour profiles covering many cuisines.
The menu is of the point-and-order type, listing the range of subs which come in two sizes – a 6-inch and a 12-inch – with their handcrafted filling combinations, as well as the range of tempting toasties and shakes.
Curated to satisfy every kind of palate, especially the Sri Lankan kind, it is not that surprising that the best-sellers include the Colombo Roast Chicken sub made up of Sri Lankan-style roast chicken, onions, a curry mayonnaise, lettuce and pickled capsicum. Another favourite is the Cheese and Chillitoastie, which is your basic grilled cheese with a spicy twist sandwiched between thick slices of toasted bread, not to be confused with the Grilled Cheese, also a popular option.
When it comes to shakes, which are both beverage and dessert in one, the Strawberry Faludashake with Faluda ice cream, strawberries, rose, and baklava is a go-to for most.
PRIMO’s easy-to-navigate menu allows customers to try combinations that would not have crossed their minds normally.
The Chicken BanhMi sub, for example, contains Vietnamese chicken, pate, coriander, carrot, jalapenos and a Vietnamese dressing which, when combined, makes for a punchy mouthful. The same can be said for the Primo Pastrami sub which is made up of Pastrami, mustard, mayonnaise, Swiss cheese, and sauerkraut.
Another sub with an unexpected flavour is the Halloumi salad which has Halloumi cheese in combination with sun-dried tomato, olives, cucumber, rocket, tomato chutney, and pickled onions. The two ingredients that elevate this sub are Labne, a yoghurt-based cheese, and roasted pumpkin.
Other subs on the menu include Chicken Caesar, Roast Beef, and Classic Italian. When it comes to melt-in-your-mouth toasties, a surprise favourite is the Sardine toastie which has sardine, tomato chutney, olive, and Swiss cheese. Other toasties include the Creamed Cornand the Butter Chicken.
All of PRIMO’s appealing shakes have something extra that makes them different to your average milkshake. The popular Double Chocolate has dark chocolate ice cream, chocolate sauce, double chocolate chips, and wafers while the equally popular Ceylon Vanilla has vanilla ice cream, marshmallows, custard cookies, meringue, and white chocolate. A shake that is equally rich yet tastes refreshingly light is the Tropical with passion fruit ice cream, banana, coconut cookies, a Bounty bar, and meringue.
At a price range of Rs 900 to Rs 1300, the 6-inch subs make for a filling meal for one and the 12-inch sub with a price range of Rs 1650 to Rs 2800 is perfect for sharing.
PRIMO is open from 10 a.m. to 11 p.m.
