A fusion of Japanese and Thai, the latest flavour at Dutch Hospital
View(s):Autarch, the latest addition to the many restaurants and eateries situated within the historic Dutch Hospital shopping precinct, merges two beloved Asian cuisines, offering up an interesting fusion of Japanese and Thai.
The newly opened restaurant is the creation of husband-and-wife team Janaka Dias and Upeksha Seneviratne, who share a love for authentic global cuisine. For Upeksha and Janaka, establishing Autarch was a journey that combined both personal and professional elements. Janaka’s background in the food industry provided a strong foundation, while Upeksha’s wish to stay connected to Sri Lanka inspired the project.
Although they had plans to migrate, neither Janaka nor Upeksha had their hearts set on it. “I love Sri Lanka and didn’t want to migrate but I was also looking for something that would keep me passionate about staying here,” says Upeksha. After much back-and-forth, they decided to open a restaurant featuring the cuisines they were very passionate about. “It’s hard to find a place in Sri Lanka where both cuisines are prepared authentically, so we decided to create that space ourselves,” said Upeksha.
A close family connection influenced the decision to bring on Chef Khamla Sangson from Thailand, who has many years of experience heading restaurants in his native Thailand as well as in South Korea and Morocco. “Our chef has worked in the industry for nearly three decades and has mastered both Thai and Japanese cooking. That’s quite rare, even internationally. We’re offering our customers a chance to experience the best of both worlds,” says Janaka.
