Amari Colombo boasts a diverse array of dining options. At the heart of its culinary offerings is Ahara, the hotel’s signature restaurant, which delivers an all-day dining experience inspired by the vibrant street-food culture of Asia. Its market-style setting brings together flavours from Thai, Japanese and Indian cuisines, alongside a selection of Western favourites.

Thai cuisine takes centre stage at Amari Colombo, with menus curated under the guidance of Michelin-starred Chef Piyachart “Boy” Puttawong. As the consulting chef for Ahara and Mira Lounge, Chef Boy’s expertise shines in every dish, elevating the hotel’s dining experience with authentic Thai flavours. Complementing his vision is the talent of in-house chef, Chef Pear Kornkanok Kutranon. Guests can also indulge in a distinctive Thai high tea experience at Mira Lounge.

Chef Boy is renowned for his ability to reinterpret traditional Thai flavours, blending innovative textures and modern techniques while staying authentic. His role at Amari Colombo underscores the hotel’s dedication to delivering extraordinary dining experiences. His commitment to sustainability ensures that all high-quality ingredients are ethically and locally sourced.

Diners can anticipate a menu featuring inventive creations, classic Thai dishes and hidden regional gems. Dishes synonymous with Thai cuisine, such as Pad Thai Kung (stir-fried rice noodles with a sweet-savoury sauce), Tom Yum (the signature hot and spicy soup), Kung Ob Woonsen (Thai shrimp and glass noodles) and Paneang Kung (prawns in Paneang curry) sit alongside the more uncharted Keang Ped (grilled duck breast in red curry), Kung Kratiem (giant river prawns in garlic), Peth Kua Prik Kluer (sautéed duck meat with garlic and chilli), and Muek Nam Dum (squid ink soup).
