Vegetarian Burgers |
Serves 6 |

You will need:
- 2 tablespoons
olive oil
- 1 medium onion,
finely chopped
- 1 small capsicum, finely chopped
- 2 cloves garlic, crushed
- 1 cup stale
breadcrumbs
- ½ cup tomato paste
- 1 teaspoon dried rosemary
- Salt and pepper, to taste
- 600g kidney beans, boiled
- Hamburger buns
- Lettuce leaves
- Sliced tomato
- Sliced red onions
Method:
- Heat 1 tablespoon olive oil in a large pan. Add onion,
capsicum and garlic. Cook, stirring, until onion has softened.
- Blend or process beans until finely chopped. Transfer to a large bowl. Add onion mixture,
breadcrumbs, tomato paste, and rosemary. Mix well. Season with salt and pepper.
- Roll a third of the bean mixture in to a ball. Place on to a greased oven tray. Flatten ball to make a 1cm thick patty. Repeat with
remaining bean
mixture.
Brush patties with extra olive oil.
- Bake patties in an oven at 200ºC for about 20 minutes, or until patties have browned.
- Sandwich patties between split,
toasted hamburger buns with lettuce, tomato, and onion.
Note
- If you don't have rosemary, use curry leaves instead.
- Margarine or any cooking oil can be used instead of olive oil.
