Peter Kuruvita at Tea Trails
Ceylon Tea Trails recently hosted Peter Kuruvita, a veteran gourmet experience chef of the Flying Fish Restaurant, one of Sydney 's top eateries.
Peter Kuruvita, the owner of Flying Fish, spent his early years in Sri Lanka where he discovered the spices and aromas of this exotic Isle. He worked at the prestigious Roux brothers Michelin three Star restaurant in London before he opened Flying Fish in 2003, to critical acclaim.
Peter recently visited Tea Trails to make arrangements for the gourmet dining experience and has entrusted his head chef Leigh Laird to fly to the Hill Country and share with us some of his most creative recipes, paired to fine Gold Medal winning Australian Margaret River wines. Four former tea planters' bungalows set among lush tea estates, have been infused with a new and decidedly gourmet vibe. Each villa, built between 1890 and 1939, offers a taste of colonial living thanks to butlers, authentic period furnishings and updated variations on British cuisine. Castlereagh and Summerville bungalows have lakefront positions, while Norwood has the best pool, with panoramic views. Tientsin is the most traditional colonial. Scenic walking trails link the properties, offering views in all directions.
