A masterclass was presented by Chef Charles Disa at the sunny courtyard of the Fort Bazaar Hotel kicking off Day 2 of Galle Literary Festival 2019!
Using local produce, Chef Disa transformed colourful vegetables, fruits and various fresh produce into healthy and balanced meals enriching the fresh, natural flavours and textures.
For starters Kale leaves tossed in toasted coconut and almonds , shaved parmesan, pomegranate and dressed in a lemon chilli vinaigrette
'There is always confusion between what is healthy and what is not. What I'm seeing across the world, is that refined sugars and carbs are the enemy, ' explains Chef Disa as he preps to make the next dish on the menu,a spiced Ahi Tuna with avocado wasabi and micro herbs.
Almond crusted chicken breast, turmeric infused quinoa and a boozy tiramisu with seasonal fruit ended the special class with Chef Charles.
